Could spring not come soon enough? I, like many others, long for the warmth of the sun and the sight of green again. I want to bury my hands in the warm dirt to plant seeds and watch them grow! Alas, there are yet cold days predicted for our near future.
During this time of winter I have to constantly remind myself: spring will come! Until then, I can’t lose hope. I have to do whatever I can to keep my chin up during these cold days. One thing that I’ve found very helpful is tending to my little herb garden. I used to think that keeping a kitchen herb garden was complicated, but it really is quite simple.
What you will need to create your own mason jar herb garden:
Place the rocks in the bottom of the jar to help with drainage. Then, layer some potting soil over that. I had to put a little extra so that the plant wasn’t engulfed within the jar. Now, you can either buy grown plants at the store or plant the seeds and wait patiently. I’ve done it both ways: the second plant to the right and last one on the left were grown from seeds. Obviously, they aren’t nearly as full and healthy as the store bought ones, which, at about $3.00 each were totally worth it.
I used to just have the jars sitting free on the windowsill, but found it a bit annoying to move all four every time the sun would shift. Hence, the wire basket. Now, this one I picked up at a garage sale for $0.25 and was extremely lucky that it fits the four jars perfectly.
You want to place your herb garden near a window that gets a lot of sun. We have the perfect spot behind our sink where we have a corner window. It’s my favorite spot in the kitchen as it features plenty of sun light and a wonderful view of a little cow farm. Smelling the fresh mint, tasting the tangy cilantro in Mexican dishes, and seeing the purply hue of the oregano gives me so much joy. I’ll admit, I don’t use the herbs in my cooking every day, but I do get very much enjoyment out of caring for them and seeing their bright green colors during this bleak, cold winter.
